How to make chipotle dressing

Ingredients for Chipotle Dressing

2 tablespoons of chipotle pepper sauce 3/4 cup of extra virgin olive oil 1/4 cup red wine vinegar 2 garlic cloves minced 2 teaspoons oregano Salt and pepper to taste Steps:

Mix all ingredients in a blender until it is smooth and then store in a jar. Refrigerate before using. Chipotle Pepper Sauce Chipotles come from spicy chili peppers that are dried, smoked and finely ground into a dark brown paste called adobo (short for marinade).

The fleshy part of the peppers also can be found canned in adobo or sold separately as an ingredient used in sauces, salsas, soups and stews.

Preparation for Chipotle Dressing

In a bowl combine 2/3 cup of Chipotle Pepper Sauce, 1/4 cup of vinegar and then add 1-1/2 cups of extra virgin olive oil.

Mix it until well blended and then cover it with plastic wrap and refrigerate for about 2 hours. When ready, pour on salad greens just before serving. Season it with salt and pepper.

This can also be used as marinade for meat or fish that you are cooking in barbecue grill or roasting pan.

Makes about 2 cups of Chipotle Dressing that can keep in refrigerator up to 3 days but get used within 24 hours after being made to prevent bacterial growths from happening in your sauce. You may need more dressing depending on how much lettuce you will use for your salad recipe.
